This Garlic Mushroom Grilled Cheese recipe elevates the classic grilled cheese sandwich with the addition of savory garlic butter mushrooms and a blend of mozzarella and aged cheddar cheese, all nestled between slices of golden, crispy sourdough bread. It’s the perfect comfort food for any meal.

- 1 tbsp olive oil
- 250g (½lb) mushrooms, sliced
- 2 tbsp butter
- 2 garlic cloves, crushed
- ½ tsp chili flakes (optional)
- 1 tsp dried oregano
- 1 tsp lemon juice
- Salt and pepper to taste
- 8 slices sourdough bread
- 1 cup mozzarella cheese, grated
- 1 cup mature or sharp cheddar cheese, grated
- Extra butter for grilling
Instructions
- Heat olive oil in a pan over medium-high heat. Add mushrooms and sauté until golden.
- Add butter, garlic, chili flakes, and oregano to the pan. Cook until fragrant.
- Season with lemon juice, salt, and pepper. Set aside.
- Mix mozzarella and cheddar cheese in a bowl.
- Lay out 4 slices of bread. Top with a mix of cheeses, then mushrooms, and cover with another slice of bread.
- Butter the outside of the sandwiches and grill on a preheated pan until golden brown on both sides and the cheese is melted.
