This Cowboy Caviar makes a great side dish for any picnic, potluck, or party, and is a great way to use up your summer produce!


Ingredients

1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) black-eyed peas, drained and rinsed
1 can (15 oz) whole kernel corn, drained
1 bell pepper, diced
1/2 red onion, diced
1 jalapeño pepper, seeded and diced
1/4 cup chopped fresh cilantro
1/3 cup olive oil
1/4 cup red wine vinegar
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
Tortilla chips, for serving

Instructions

In a large mixing bowl, combine the black beans, black-eyed peas, corn, diced bell pepper, diced red onion, diced jalapeño pepper, and chopped fresh cilantro.
In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, ground cumin, chili powder, salt, and pepper until well combined.
Pour the dressing over the bean and vegetable mixture in the large bowl and toss until everything is evenly coated.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
Before serving, give the cowboy caviar a good stir and adjust the seasoning with additional salt and pepper, if needed.
Serve the cowboy caviar chilled with tortilla chips for dipping.
