Ingredients
3 ripe bananas, mashed
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
For the frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Alternately add the flour mixture and buttermilk to the creamed mixture, starting and ending with the flour mixture. Fold in mashed bananas.
Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
To make the frosting, beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
Once the cake is completely cooled, spread the frosting evenly over the top.
